The production zones are going to be very specific, thus the shipping routes are located from the Persian Gulf, North Africa, West Africa and the Caribbean, to Europe, Japan, North America and China. This traffic, therefore, becomes a potential risk that will be aggravated by different issues outlined in the manual. Thus, the author talks about the condition of the ships, which, although it has improved over the last years, still remain many cases in which international regulations for transport safety are not yet fulfilled. In addition, it is necessary to remark the problem when establishing liability in case of an accident, since the global fleet is formed by small companies with a large number of intermediaries, as for instance happened, and it is shown in the work, in the case of the Prestige ship disaster. Statistically speaking, the greatest number of spills occur when the fuel is manipulated, during the loading and unloading process, followed by those arisen in collisions or agroundings.</span></div> <div style="line-height: 150%; margin: 0px 0px 11px; text-align: justify;"> <span lang="EN-US" style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;">When a hydrocarbon spillage is poured into the sea, it is not only essential to know its properties, but also their behavior. Also, in order to act, how and in which way it will spread and the movement the crude will follow. Mathematical and computerized methods, as we see in the manual, will help professionals to act accordingly. In the book, all means for the containment of hydrocarbons once the spill has occurred are described, by different types of barriers that restrain their expansion. Once contained, the mechanisms employed for the recovery of the spilled oil are explained, reviewing the available resources and products. The work not only deals with accidents in the marine environment, but also explains how to act when spills penetrate land and rivers. The disastrous impact of a spill for the terrestrial space when it penetrates the coast, is an issue that must be foreseen by carrying out a contingency plan before and after the accident, so that rehabilitation and consequences are the least possible.</span></div> <div style="line-height: 150%; margin: 0px 0px 11px; text-align: justify;"> <span lang="EN-US" style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;">Prevention and rapid action are the most effective ins<span style="color: black;"></span><span style="color: #cc0000;"></span><b></b>truments to stop the spill, and this manual details the monitoring and observation ways that exist, as well as contingency plans and international regulations for such prevention. </span></span></div> <div style="text-align: justify;"> <span style="font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black; font-family: "georgia" , "times new roman" , serif;"><br /></span></span></div> <div style="text-align: justify;"> <span style="font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black; font-family: "georgia" , "times new roman" , serif;">Las algas por tanto, sí se comen.</span></span></div> <div style="text-align: justify;"> <span style="font-size: 12pt; line-height: 150%; margin: 0px;"><span style="font-family: "georgia";"><br /></span></span></div> <div style="text-align: center;"> <b><span style="color: black;">*******************</span></b></div> <div style="text-align: center;"> <br /></div> <div style="text-align: center;"> <br /></div> <div style="line-height: 150%; margin: 0px 0px 11px; text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">Recently, one of the world's most prestigious award in gastronomy, the Gourmand World Cookbook Award, has been presented to the book </span><i style="mso-bidi-font-style: normal;"><span style="color: black;">¿Las Algas se Comen?</span></i><span style="color: black;">, published by the Editorial UCA imprint. The award, bestowed within the Health and Nutrition Institutions category, is considered the Oscar of gastronomy, and supposes a recognition to the work of more than 25 years of research and teaching of the Biology Department, Faculty of Marine and Environmental Sciences, of the University of Cadiz. The authors of this work are the scientists José Lucas Pérez Lloréns, Ignacio Hernández Carrero, Juan José Vergara Oñate and Fernando G. Brun Murillo, as well as the reputed chef Ángel León.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">This work supposes a unique and extremely complete document concerning all the seaweed universe, from aspects related to their history, passing through their farming and harvesting, the beneficial contributions they have for health, as well as the different forms of consumption and marketing for gastronomic use. In addition, this book includes 36 recipes made with this delicacy, from 17 of the most prestigious spanish chefs. Renowned figures as Andoni Luis Aduriz, Juan Mari Arzak, Eneko Atxa, Martín Berasategui, Quique Dacosta, Rodrigo de la Calle, Dani García, Diego Guerrero, Nacho Manzano, Francis Paniego, Joan Roca, Paco Roncero, Carme Ruscalleda, Mario Sandoval, Ricardo Sanz, Pedro Subijana, and Angel Leon himself have collaborated.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">The authors of this publication will already deal with seaweeds, in a secondary form, in </span><i style="mso-bidi-font-style: normal;"><span style="color: black;">Flora marina del litoral gaditano. Biología, ecología, usos y guía de identificación</span></i><span style="color: black;">, from 2012, and also published by the Publications Service of the University of Cadiz. Right after, the organization by some of the authors of the specialization course The Amazing World of Seaweeds: an unforgettable Journey from Biology to Gastronomy will arose, carried out by the CEI•MAR and the Directorate General of International Affairs, and coordinated by José Lucas Pérez Llorens. During 2014 and 2015, great specialists in the subject, such as Dr. Prannie Rhatigan, would participate in the courses, arising from this experience the initiative to conceive the work presented here.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">Regarding the content of the book, we must comment that it is structured in 9 chapters. The first one is a mandatory identification of the seaweeds in its full extent, dealing with aspects such as, for instance, the different typologies, their structure, habitat or longevity, a fundamental study to reach an understanding of the vast spectrum that the universe of this great unknown supposes, as well as, at the same time, to know the imminent danger that their ecosystem suffers.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">In the consumption of seaweeds, there is a large difference between the eastern and western world. While in Asian countries they are included in daily cooking, until today they are not getting more than a small impact within the European or North American cultures. The second chapter of the book deals with the history of its consumption, resolving these cultural and nutritional questions. Despite the lack of direct use in our cuisine, the third chapter analyzes the use of algal macromolecules, such as the phycocolloids (Agar, Carrageenans and Alginates), widely employed for various culinary uses due to their composition. Thus, it is particularly interesting to discover the wide variety of products that use these elements for multiple type of industries, as an additive, stabilizer, thickener, excipients or gelling agents. Precisely, due to this abundant use, the creation of machinery for its mechanical harvesting was promoted, as well as the possibility of cultivating them in specific systems, in the open sea, bays, estuaries or tanks. From this history of the harvesting and farming of seaweeds, from their manual procedure beginnings, something still performed in some places, until the current physiculture or mariculture, a detailed study is made in chapter four of the awarded work.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">One of the most attractive reasons for the incipient inclusion of seaweeds in the diet, is the benefit that provide to our health. In chapter five, the authors talk about how the inclusion of this food to the diet has made, for example, Japan the country with the highest rate of longevity in the world. In this way, the consumption of seaweeds is associated to the lower existence of coronary diseases, cancers or hyperlipidemia. Therefore, multitude are the products that are being commercialized in different sale formats. About this commercialization deals the sixth chapter of the work, as well as their delicate processing, which must follow careful guidelines in the factory, not to spoil the product, once it has been collected.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">Specifically in Spain, we must indicate that the marine garden is especially wide, so that the seventh chapter has been dedicated to make a necessary detailed review of the large number of species that inhabit within our territory.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">But, as it is observed in the eighth chapter of the book, normally, when choosing a certain food, is not usually done for its healthy properties, but for the simple pleasure of its tasting, election closely related to the senses, which directly affects the culinary experience. In the work it is detailed the effect of each sense on the food and its particular use so that the experience becomes as pleasant as possible. The best cooks of Spain give good use of this, whose, in the last chapter of the work, perform for the publication, 36 recipes of haute cuisine with the star ingredient of the publication, seaweeds.</span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;"><br /></span></span></div> <div style="text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">This book, therefore, supposes a true jewel that discovers completely unknown aspects of the wealthy marine world. An exceptional work that combines the rigorous research of biology and gastronomy professionals, compiled in a high quality edition, where it is also necessary to highlight the exquisite treatment of the images and illustrations that accompany the texts, that enhance even more the pleasure of its reading.</span></span></div> <div style="text-align: justify;"> <span style="color: black;"><br /></span></div> <div style="line-height: 150%; margin: 0px 0px 11px; text-align: justify;"> <span style="font-family: "georgia" , "serif"; font-size: 12pt; line-height: 150%; margin: 0px;"><span style="color: black;">So yes… seaweeds can be eaten.</span></span></div>
